Everyone’s singing the praises of avocados’ nutritional properties these days. I simply love the creamy texture and slightly nutty flavour of them and there’s almost nothing I’d rather snack on (preferably with home-grown and very flavourful tomatoes and some fresh basil) on a warm summer’s day. This way of serving them is quick and simple to make. Bruschetti should have punchy yet “clean” flavours in my opinion. The addition of fresh chilli and a sprinkle of Piri-piri seasoning in this recipe, gives them just the perfect amount of spice they need to become interesting!
These are great as a starter or as part of a casual, light lunch with an accompanying salad. Served with other delicious bruschetti (fabulous, easy recipes to follow of course ) they make a healthy and impressive party or al fresco nibble.
INGREDIENTS – (makes about 12 bruschetti) A loaf of bread. Ciabatta works well but any tasty rustic bread will do.
